Quick Fix Meals...

Does anyone have any ideas???? May is looking to get hectic, June is heating up and July has guaranteed fireworks! The ideal meal: short ingredient list, yummy, different. Feel free to post a comment or shoot an email!

I got one for you!!
MIDDLE EASTERN STUFFED PEPPERS:
prep time 10 mins/cook time: 15 mins

What you need:
4 medium sweet bell peppers
1/2 lb of lean ground beef
1/2 c golden raisins
1 8oz can tomato sauce
1/4 c sliced stuffed green olives

Seasonings:
1/2 tsp chopped garlic
1tsp cinnamon
2 tsp ground cumin
1 c precooked brown rice (heated)

STEPS:
1. preheat oven to 400
2. cut off tops of peppers remove seeds and membranes and place in a baking pan
3. in a non stick skillet cook beef, garlic, cinnamon, and cumin on medium until beef is slightly pink (3-4 mins. Add the raisins and tomato sauce and cook until the mixuture is hot (about 3 mins)
4. removes killet from heat and mix in rice and sliced olives.Place equal amounts of the mixture into each pepper and replace topes cover pan tightly with foil.
5. bake until peppers are soft (about 15 mins)

Makes 4 servings

I have one too and its amazing and light...

preheat to 350
marinate bass steaks with olive oil salt and pepper
create a mixture of chopped up ginger, lime juice, lime zest, red onion (the more the better, of everythign actually) , a hint of red chile pepper,
place the steaks in parchment sheet
pour the mixture of lime juice extra over, add any veggies to be cooked with the fish in the parchment, finally add a sprig of cilantro on top of the fish. bake for 12-14 minutes....you can take it out to check, but it should cook fairly fast!
make one "packet" per serving, the fish will cook itself in all those juices and pick up all the flavors!
serve in the paper for the dramatic look.
